Simba-shi Soba is known for its handmade soba made from fresh buckwheat seeds. These seeds are milled into flour and skillfully shaped by hand into fine strands of noodles by their Japanese Soba Masters at the restaurant daily. If you’re there at the right time, you’ll witness the making of soba through the display glass at the outlet.
